Low carb muffins?! And only 3 ingredients!

How fun it is to experiment with ingredients! These low-carb muffins are also gluten-free, sugar-free, low in lactose and delicious. We thought like this: if you can bake pancakes from a banana, egg and protein powder, shouldn't you also be able to make a muffin from approximately the same ingredients?

And that certainly works! The structure is slightly moister than this one high protein muffins but the taste of these low carb muffins is delicious. And you only need 3 super healthy and natural ingredients for it. How easy is that?!

So you can really continue to eat from this undisturbed. I like to eat them as a snack or when I get hungry in the evening. You can make them in an instant! Here we go!

  1. Preheat the oven to 180 degrees.
  2. Puree the mango with a hand blender until smooth.
  3. Add the protein powder and egg and mix together.
  4. Pour the dough into greased molds or line molds with baking paper.
  5. Bake the muffins for 20 minutes. The exact baking time depends on your oven and how big you made the muffins. Poke the inside with a skewer. If the skewer comes back without dough, the muffin is done.
