Blueberry muffins with a cloud of protein
Blueberry muffins, you can wake us up at night for that. What a delicacy! Too bad it's not so healthy to eat them every day. But Live Puri has of course found a healthy alternative for that! Since you can easily replace flour with protein powder, we have put together this recipe for you.
Muffins are the big brother of cupcakes. Cupcakes are often decorated, while muffins are eaten plain. But the best thing is that muffins rise above the mold so that they get a bit of a mushroom shape. Nice and big!
These muffins contain no less than 8 grams of protein per piece. That's 6 grams more than regular muffins!
You can also do it in this recipe lightly sweetened Live Puri Vanilla protein powder to use. Then reduce the amount of sugar to 50 grams.
Ingredients for 4 large muffins:
- 2 eggs
- 25 gr or 1 sachet Live Puri Vanilla protein powder unsweetened
- 125 g butter at room temperature
- 100 gr flour (optional)
- 2 tablespoons of milk
- 75 gr sugar
- handful of blueberries
Preparation
- Preheat the oven to 170 degrees.
- Put the butter in a mixing bowl.
- Add the sugar little by little and mix well.
- Add the eggs 1 by 1.
- Add the flour and protein powder little by little. Keep mixing well all the time.
- Add the milk and mix for another minute on the highest setting.
- Gently stir the berries through the batter. Keep a few for decoration.
- Fill the molds for 2/3 with 2 spoons.
- Bake at 25 degrees for 170 minutes. You can test if they are cooked by inserting a skewer into the center. If the skewer comes back dry, the muffins are ready.
These blueberry muffins are quick and easy to make and ideal for coffee or high tea! Fun to make with kids and because of it Live Puri you can also make a healthier version of protein powder.
