Sugar-free low-carb marzipan
Do you say marzipan, do you think of Sinterklaas. At least I do. That soft crusty structure, that delicious sweet treat, those warm winter evenings! My grandmother bought a large pink marzipan pig every year, which we then enjoyed together. Just one more little bit…
When Anouk (you may already know her from this one low carb victoria sponge cake or this one shake in a cake roll), came up with the idea for a sugar-free, low-carbohydrate and high-protein marzipan, so my heart jumped! She made a sugar-free marzipan with vanilla Live Puri protein powder. A delicious sugar-free alternative that also has the same structure as my old-fashioned pink pig!
From now on, marzipan is no longer just part of Sint. You can always have these sugar-free low-carb marzipan balls in between! Because it's possible!
Preparation time
Ingredients:
- 90 grams almond flour
- 30 gram Live Puri vanilla protein powder lightly sweetened
- 60 gram Stevia frost
- 2 pasteurized egg whites
- 2 drops of almond aroma/essence
- pinch of salt
Preparation
- Mix all ingredients except the Steviala in a bowl and knead by hand.
- Add the Steviala to taste.
- If the structure is not yet satisfactory, add some extra almond flour.
- Roll into balls by hand. Or knead it into a pig (if you can).
- Enjoy!
The marzipan is best kept in the fridge and can be kept for 7 days. If you manage not to eat them all in one go.
