Where spice nuts and cookie dough meet, you will find your new favorite Sinterklaas candy. We would like to introduce you to this healthy protein spice nut dough.

Kruidnoten are the most popular Sinterklaas treat. The small cookies – which some people wrongly call 'pepernoten'' are baked with flour, sugar, butter and gingerbread spices. The classic recipe for spice nuts is therefore simple, but unfortunately not very healthy. And snacking on the raw dough? Not wise! Raw flour that is not heated can make you very sick. Of course we adapt to that…

We don't mean to brag, but this recipe is spectacular. It has everything you are looking for in a snack: easy, nutritious, filling and super tasty. Moreover, the recipe contains no raw egg or raw flour. Completely safe to eat. And believe me, that 'food' won't let you say it twice. After all, snacking on the dough is the best part of baking cookies and spice nuts.

Preparation time

20 minutes preparation + 1h refrigerator

Nutritional value

Total: 521 kcal, 46 g carbohydrates (of which 3,4 g natural sugar), 27,7 g fat, 44 g protein.

Ingredients

Preparation 

  1. Mix the oat flour, coconut flour, biscuit and gingerbread spices, brown sugar (substitute) and salt in a bowl.
  2. Add the melted butter, sticky sweetener and vanilla extract to the bowl and stir to form a sticky mass.
  3. Add – little by little – the protein powder while you keep stirring. The dough may seem dry at first, but if you keep stirring it will turn out fine. (If the dough is really too dry, you can add a little bit of water.)
  4. Shape the dough into a ball and put it in the fridge for an hour.
  5. Sprinkle the spice nuts dough with shakers or mini choco spice nuts and DIG IN.
