Protein-rich pea soup

Do you know that? Those days when your planning, your exercise regime and your good routines all go to shit? On such a day there is really only one thing you should eat. That's right: soup. To be precise, this protein-rich pea soup with spinach and pistachio pesto. 

This vegetarian, protein-rich pea soup with spinach and pistachio pesto is comfort food par excellence. A bowl of comfort for the moments when you need it, but of course also just a delicious meal on a stormy autumn day. With ingredients such as peas and spinach, this soup also gives your body the nutrients it needs. Consider important vitamins, minerals and complex carbohydrates. And complete proteins, of course thanks to Live Puri natural protein powder; a protein powder based on milk protein with a neutral, but very creamy taste or ounces vegan natural protein powder (we used this in this recipe). Talk about enriching your soup!

Because of its high protein content and large amount of fiber, you can consider this protein-rich pea soup as a meal in itself. It's quite filling! But a piece of good (whole wheat) bread is never out of place next to a bowl of soup. 

Preparation time

15 minutes preparation + 10 minutes cooking time

Nutritional value

Per meal soup: 342 kcal, 15 g carbohydrates (of which 4 g sugar), 13 g fat, 31 g protein

Ingredients (2 portions of meal soup)

  • 1 tsp olive oil
  • 1 small onion
  • 2 cloves garlic
  • 400 grams of frozen peas
  • 200 grams of fresh spinach
  • 500 ml vegetable stock
  • 2 tablespoons (pistachio) pesto
  • 40 gram Live Puri protein powder natural
  • salt and pepper, to taste
  • roasted pistachio, in pieces

Preparation 

  1. Clean the onion and garlic. Chop the onion and finely chop the garlic.
  2. Heat olive oil in a medium soup pot and fry the onion until translucent. Then add the garlic and fry briefly.
  3. Add the peas, spinach and stock to the pan and bring to the boil. Let the vegetables simmer in the stock for 10 minutes and puree everything  then use a hand blender to make a smooth soup.
  4. Stir the pistachio pesto and protein powder into the soup and heat it briefly. Taste and season with salt and pepper if necessary. Garnish the soup with pieces of roasted pistachios.
