Protein-rich mini cakes

Cakes come in all shapes and sizes. Protein-rich mini cakes with strawberry, peanut and chocolate are one of the better ones in our opinion. They are soft, nutritious, gluten-free, look good to eat and - not unimportantly - taste delicious. What are you waiting for? We're going to make mini cakes!

Preparation time

15 minutes preparation + 60 minutes resting time + 10 minutes baking time + 15 minutes decorating time

Per protein-rich mini cake (without coating and topping): 97 kcal, 7 g carbohydrates (of which 2 g sugar), 3 g fat, 9 g protein

Ingredients (10 mini cakes)

For the protein-rich mini cakes

  • 70 g oat flour (optionally gluten-free)
  • 70 g Live Puri strawberry protein powder
  • 35 g peanut flour
  • 5 g baking powder
  • 120 g unsweetened applesauce
  • 120 g strawberry curd (we used Almhof protein curd)
  • 60 g unsweetened almond milk
  • 25 g butter, melted

For the coating

  • Pure (sugar-free) melting chocolate from Steviala
  • Peanuts in chocolate (sugar-free), chopped

Preparation 

  1. Sift the oat flour, LivePuri protein powder, peanut flour and baking powder into a large mixing bowl. These are the dry ingredients. 
  2. Add the remaining ingredients protein-rich mini cakes in a separate bowl. Mix these together well using a fork or hand mixer. These are your wet ingredients.
  3. Use a spatula to transfer the wet ingredients into the bowl with the dry ingredients. Mix everything with a fork into a dough. Wrap the dough in foil and place it in the refrigerator for an hour.
  4. Once the hour has passed, preheat the oven to 175 degrees and line a baking tray with a sheet of baking paper. Then divide the chilled dough into 10 parts and form round balls with your hands. Place the balls on the baking tray and gently flatten them slightly. 
  5. Bake the protein-rich mini cakes for 10 to 15 minutes in the preheated oven. Let the mini cakes cool completely in the oven (with the door open).
  6. After cooling you can decorate the mini cakes. Melt the dark chocolate in a bain-marie and dip the cooled cakes one by one in the melted chocolate. Place the coated cakes on a rack, sprinkle with the chopped chocolate peanuts and let the chocolate harden completely.
