Protein-rich gingerbread bars

Almost every Dutch person has grown up with it: gingerbread. If you didn't get it as a snack to school, your grandma used gingerbread as a binder for hachee and stew meat. The huge selection of gingerbread in the supermarket proves that the spicy, creamy cake is still immensely popular. But unfortunately, the typical Dutch gingerbread is not healthy. Gingerbread contains hardly any proteins, there is a lot of sugar in gingerbread and most gingerbread is not high in fibre. And the 'healthy' zero gingerbread? It has a laxative effect because of the many artificial sweeteners. High time for one Live Puri version of the crowd favorite! May I introduce you to these whole grain, sugar free and high protein gingerbread bars?

These protein-rich gingerbread bars primarily owe the high amount of protein to our delicious protein powder. But that's not the only protein-rich ingredient of these gingerbread bars... Because did you know that you can also make delicious protein-rich pancakes, cakes and gingerbread with protein pudding? In this recipe, the protein powder and the protein pudding together ensure that a bar of gingerbread contains no less than 11 grams of protein! Moreover, making these protein-rich gingerbread bars is a piece of cake, and you can also give it your own twist. Gingerbread with chocolate, gingerbread caramel or gingerbread with vanilla flavor - it's all possible!

Preparation time

Prep for 10 minutes + bake for 20 to 25 minutes

Nutritional value  

Total (6 servings): 808 kcal, 61 g carbohydrates (of which 10 g sugar), 19 g fat, 67 g protein.
Per protein-rich gingerbread bar: 135 kcal, 10 g carbohydrates (of which 2 g sugar), 3 g fat, 11 g protein.

Ingredients

  • 70 grams (wholemeal) semolina
  • 30 gram Live Puri Natural (or Vanilla, or Chai, or Cacao, or Coconut)
  • 80 gram natural sweetener Ery-Bronze
  • 4 grams baking powder
  • 2 tsp cookie spice
  • 2 eggs
  • 1 cup protein pudding in flavor of your choice (caramel, chocolate or vanilla)
  • optional: sugar hearts to decorate

Preparation 

  1. Preheat the oven to 180 degrees (160 degrees convection) and grease a baking tin for brownies well.
  2. Take a large bowl and mix all the dry ingredients (wholemeal semolina up to and including gingerbread spices) well.
  3. Break the eggs into the bowl with the dry ingredients and add the protein pudding.
  4. Mix all ingredients together with a whisk (or a mixer on the lowest setting) and pour the batter into the baking tin. Place the baking tin in the oven and take it out after 20 to 25 minutes.
  5. Allow the 'slice' gingerbread to cool completely before cutting into bars (and decorating if necessary).
