Protein Iced Cappuccino Rice Pudding
If there is one drink that is inextricably linked to summer, it is iced coffee.
The sun only has to shine for a moment and many Dutch people exchange the warm cup of coffee for an iced cappuccino. So do we Live Puri. Although we don't just make protein-rich iced coffee. No, we would like to extend the 'iced coffee' theme as broadly as possible.
And the result is – if we say so ourselves – certainly impressive.
Inspired by the iced cappuccino, we present the protein iced cappuccino rice porridge. A fantastic breakfast, but just as suitable as a dessert.
(Make sure that the instant coffee you use does not contain caffeine.) And don't forget the golden spoon!
Is it winter, is the Dutch summer coming to an end or do you simply need hot coffee more? Then definitely make one Protein Latte Macchiato.
Preparation time
30 minutes (of which 25 minutes cooking time)
Nutritional value per portion: 413 kcal, 55 g carbohydrates, 6 g fat, 35 g protein.
Ingredients (1 serving)
- 50 grams of dessert rice (or risotto rice)
- 250 ml milk (we used semi-skimmed cow's milk)
- 200 ml water
- Pinch of salt
- 25 gram Live Puri Vanilla protein powder unsweetened of lightly sweetened vanilla protein powder
- 50 ml water
- 1 tsp instant coffee, decaffeinated if desired
- sugar (substitute) of your choice, for example this one from Steviala
- extra dash of milk (about 50 milliliters)
Preparation
- Add the dessert rice, milk, water and salt to a pan (preferably with a thick bottom) and bring to the boil. As soon as the rice boils, place the pan over low heat and cook for 25 minutes - stirring occasionally - until done and creamy. Please note: not every dessert rice takes this long to cook.
- Dissolve the protein powder in the remaining 50 ml of water (make sure there are no lumps in the mixture) and add it to the porridge. Stir well immediately. Finally, add the instant coffee and stir one last time. Then let the rice porridge cool completely.
- Sweeten the protein iced cappuccino rice porridge as desired and serve with a dash of extra milk.
