Matcha-Strawberry Crepes
The creamy, grassy, slightly sweet taste of matcha turned out to be a... matcha made in heaven with us strawberry flavored protein powder. And these delicious matcha-strawberry crêpes are the basis for that discovery. We won't mince words about it; these are the most delicious nutritious, protein-rich crepes you will ever eat. If not for breakfast, then for lunch or a fantastic dessert. And with this color scheme, these crepes score extra hard on Valentine's Day. So, how about surprising your (potential) sweetheart with a matcha-strawberry crepe? We would know!

Nutritional value
Per matcha-strawberry crepe*: 95 kcal, 12 g carbohydrates (of which 1 g sugar), 2 g fat, 7 g protein
*Without strawberries and meringue
Ingredients (15 Matcha-Strawberry Crepes)
- 250 grams of wholemeal flour
- 50 gram Live Puri strawberry protein powder
- 6 tsp matcha powder (culinary grade)
- 45 grams of sugar (substitute) (we have EryBronze of Steviala used)
- 1 tsp baking soda
- pinch of salt
- 225 grams Greek yogurt (we used 10%)
- 500 ml (vegetable) milk (we used unsweetened almond milk)
- 2 eggs (size L)
- 2 tsp vanilla extract
- 1 tsp apple cider vinegar
- fresh strawberries and meringue to serve
Preparation
- Prepare two mixing bowls: one large and one medium. Mix the dry ingredients (flour to salt) in the large bowl. Place the wet ingredients (Greek yogurt to apple cider vinegar) in the medium bowl and mix until smooth.
- Then, while continuing to mix, add the wet ingredients to the dry ingredients little by little. Stop mixing when a smooth and lump-free batter has been formed.
- Grease a crepe pan or plate and let it heat up thoroughly. Using a soup spoon, pour batter into the pan. Move the pan in a circular motion to distribute the batter over the entire surface. Turn the crepe over as soon as the top is nice and dry and the edges are loosening. Fry the crepe for another 1 minute on the other side and then remove it from the pan. Finish all the batter in this way.
- As soon as you want to serve the crêpes, place one on a plate and crumble some meringue over it. Then fold the crepe into a triangle and serve with fresh strawberries and extra crumbled meringue.
