Nutritional value
per piece: 188 kcal, 1 g carbohydrates, 15 g fat, 12 g proteins.
Ingredients for 12 pieces:
- 65 gr coconut oil
- 75 g unsalted almond paste
- 125 ml unsweetened almond/rice/soy/hemp milk
- 130 gr Live Puri meal replacement Vanilla of Live Puri vanilla protein powder
- 40 gr almond flour
Top layer:
- 70 gr dark chocolate (sugar free)
- 15gr coconut oil
- 20gr almond nuts coarsely chopped
Preparation
- Heat the coconut oil very carefully in the microwave until it is liquid. Coconut oil has a low melting point, so it needs very little to melt. So keep an eye on it to prevent it from boiling. Then mix together with the almond paste and milk in a medium sized bowl. Mix together with a whisk until it becomes a cohesive mixture. Add it Live Puri vanilla meal replacement powder and the almond flour and mix well with a wooden spatula. This mixing takes a few minutes. Continue to scoop the mass well until all the powder has been absorbed. Add half of the chopped almonds. The dough will remain crumbly.
- Place baking paper in a flat baking tin of 30 x 15 cm and pour the mixture into the baking tin. First press the dough well with your hands and then with a spoon so that it becomes a flat cake.
- To make the topping, heat the chocolate and coconut oil together in the microwave until they liquefy. Stir well and pour over the dough so that the chocolate mixture is spread over the entire dough.
- Then sprinkle the other half of the chopped almonds over the chocolate.
- Place in the refrigerator for an hour. Cut into strips and enjoy. Best chilled!
You can keep the lunch bars in the refrigerator for two weeks. But I expect you won't be able to leave them alone for that long 😉
