Protein Carrot Mugcake

Mug cakes, we love it! Much faster than this, you won't be served a cake. You make a mosquito cake in the microwave. Always make sure you don't go for the brown crust! You don't get that, but the result is always surprisingly airy and tasty.

We made this before Protein Vanilla Mugcake. But this Carrot cake variation contains, in addition to all the other goodies, another 50 grams of vegetables. The easiest vegetables of the day! We use some spices, ginger and the Live Puri Chai protein powder to make this Carrot mug cake nice and surprising.

Cooking times

2 minutes in the microwave

Ingredients:

  • 60 grams of banana
  • 50 grams grated carrot
  • 25 grams of oatmeal
  • 10 grams of grated ginger
  • 1 egg
  • 25 gram Live Puri Chai protein powder unsweetened
  • 1 teaspoon of cinnamon
  • 1 teaspoon baking powder
  • 1 tablespoon honey (to taste)
  • 100 grams of cottage cheese (optional)

Preparation

  1. Put the oatmeal, ginger, banana, cinnamon, baking powder and egg, 30 g carrot and Chai protein powder in the blender and mix them briefly.
  2. Stir in the rest of the carrot.
  3. Spoon the mixture into a mug. It is useful to grease the mug a little bit so that the cake comes out easily.
  4. Put the bowl in the microwave for 2 minutes (at approximately 900 watts).
  5. Turn the mug over on a plate and your mug cake is ready.
  6. A tasty topping with this mug cake is low-fat cottage cheese.
  7. Njoy!

If your microwave cannot handle 900 watts, extend the cooking time by 30 seconds at 750 watts. Not much longer, because then the structure of your cake will become tough and spongy.
