Banana muffins with nuts and crumble

Banana bread, banana ice cream, banana cookies… You can go in all directions with overripe bananas. This time we take the banana muffins turn. And not just any banana muffins, but banana nut muffins with crumble. And they are nutritious too!

Anyone who has ever ventured into making a nutritious baking will have noticed that overripe bananas are often used as a substitute for butter and sugar. This is no different in these banana muffins with nuts and crumble. What is different is that these muffins do not have that typical 'healthy' taste. In fact, our test panel suspected that we had bought these banana-nut muffins with crumble from a coffee bar or pastry shop. The secret of these nut and crumble banana muffins? The combination of overripe bananas (the riper, the better), unsweetened applesauce and a little bit of healthy fat. But of course also our natural protein powder, which has been specially developed for baking and you can use (partly) to replace flour. No question of bone dry, but airy protein-rich muffins that will make the whole family (including yourself) happy. Go ahead!

Preparation time

15 minutes preparation + 25 minutes baking time

Nutritional value

Per muffin: 142 kcal, 18 g carbohydrates (of which 2 g sugar), 5 g fat, 6 g protein.

Ingredients

  • 80 grams of oatmeal
  • 30 grams of whole wheat flour
  • 45 gram Live Puri Natural protein powder
  • 10 grams of custard powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • pinch of salt
  • 2 teaspoons of cinnamon
  • 300 grams of overripe bananas
  • 80 grams of unsweetened applesauce
  • 1 egg
  • 10 grams of avocado oil or sunflower oil
  • 60 grams of honey (substitute)
  • 1 teaspoon almond extract

 

  • 20 grams of spreadable butter
  • 30 grams of nuts of your choice, chopped into fine pieces
  • 15 grams of whole wheat flour
  • 35 gram Steviala Ery Bronze (natural brown sugar substitute)

Preparation 

  1. Preheat the oven to 220 degrees (200 hot air) and fill a muffin tray for 12 muffins with cupcake wrappers.
  2. Take a large bowl and mash the ripe bananas in it. Add the apple sauce, the egg, the oil, the honey substitute and the almond extract and stir everything together vigorously. These are the wet ingredients.
  3. Take another bowl and add the oat flour, whole wheat flour, protein powder, custard powder, baking powder, baking soda, salt and cinnamon together. These are the dry ingredients.
  4. Now take another container and combine the ingredients for the crumble: the spreadable butter, chopped nuts, the flour and the sugar (substitute).
  5. Now add the dry ingredients to the bowl with the wet ingredients and stir briefly. Do not mix too long, if you mix a muffin batter too long, the structure will become very 'solid' instead of airy.
  6. Fill the muffin tin with the batter and divide the crumble over all the muffins. Bake the muffins in the warm oven for 5 minutes and then lower the temperature by 20 degrees. Then bake the muffins for another 15 to 18 minutes.
